Inspired by his grandmother’s Syrian cooking, Mike Minor has been artfully creating unique dishes since a very young age. His passion for food is supported by years of experience working in some of the city’s top kitchens and his study of regional cuisine in Oaxaca and Michuacan, Mexico.
As the Executive Chef at Border Grill Las Vegas, Mike wholeheartedly embraces founding chefs Mary Sue Milliken and Susan Feniger’s decades-long passion for using the best seasonal and sustainable ingredients available and takes immense pride in creating delicious dishes for his guests. Chef Mike has won the StarChefs’ Rising Stars Sustainability Award for placing sustainability at the heart of his culinary philosophy, and being a leader of sustainability in his community. Mike’s cooking has won the restaurant critical acclaim and is widely regarded as the city’s best Mexican cuisine.
