French native Laurent Pillard began his culinary training during an internship under Claude Barnier at the Plaza Athenee in Paris. He trained as an apprentice at the Michelin two-starred Grand Hotel du Lion d’Or 2 with chef Didier Clement, then under three-star chef Alain Senderens.
Since, Laurent has traveled all over the world and worked at several Michelin-starred establishments. After two years at the Ritz Carlton Buckhead, he met chef Hubert Keller, and quickly made the decision to help him open Fleur de Lys in Mandalay Bay Resort & Casino. As Executive Chef, Laurent’s talent and experience shaped this new destination restaurant. Now Chef Pillard serves as Corporate Chef for Hubert Keller, where he develops new recipes at the AAA Four Diamond Mandalay Bay.
